A simple but nutritious rice bowl paired with crunchy and savory braised burdock — a perfectly balanced meal.
Main: Vegetable Tofu Rice Bowl
Description: A healthy rice bowl topped with stir-fried tofu and assorted vegetables.
Ingredients
- 1 bowl of cooked rice
- 1/2 block of tofu
- 1/4 onion
- 1/4 zucchini
- 1/4 carrot
- 2 shiitake mushrooms
- 2 tbsp soy sauce
- 1 tbsp vegetarian oyster sauce (or more soy sauce)
- 1 tsp sugar
- 1/2 tsp minced garlic
- 1 tsp sesame oil
- Sesame seeds (for garnish)
- Cooking oil
Instructions
- Cut tofu into bite-sized cubes. Julienne all vegetables slightly thick.
- Heat oil in a pan and stir-fry garlic and onion.
- Add carrot, zucchini, mushrooms, and tofu in that order, stir-frying each briefly.
- Once vegetables are cooked, add soy sauce, oyster sauce, and sugar. Stir to coat evenly.
- Turn off the heat and mix in sesame oil and sesame seeds.
- Serve over a bowl of warm rice.
Side Dish: Soy-Braised Burdock Root (Ueong Jorim)
Description: Sweet and savory burdock root with a delightful crunch — a great Korean-style side dish.
Ingredients
- 1 burdock root (30–40 cm)
- 4 tbsp soy sauce
- 2 tbsp sugar
- 1 tbsp corn syrup (or oligo syrup)
- 1 tbsp cooking oil
- 1 cup water
- Sesame seeds (for garnish)
Instructions
- Peel burdock and slice thinly with a peeler or knife. Soak in vinegar water for 10 minutes to remove bitterness. Drain well.
- Heat oil in a pan and sautรฉ the burdock lightly.
- Add soy sauce, sugar, corn syrup, and water. Bring to a boil over high heat.
- Reduce to low heat and simmer until the sauce is mostly absorbed.
- Finish with sesame seeds. Serve cooled or at room temperature.
